The peculiar characteristics attributable to the "Sargano di Fermo" variety are: "Oil with a good balanced fruity, slightly sweet, spicy and bitter aftertaste, yellow in colour, with a good content of polyphenols and chlorophylls" *.

High quality extra virgin olive oil obtained with olives of the "Sargano" variety only. This variety of olive trees, typical of the province of Fermo and the coast of the Marche region, is particularly appreciated. The peculiar characteristics attributable to the "Sargano di Fermo" variety are: "Oil with a good balanced fruity, slightly sweet, spicy and bitter aftertaste, yellow in colour, with a good content of polyphenols and chlorophylls" *.Sargano di Fermo oil is obtained from olives with the right degree of ripeness in order to obtain the maximum of the particular characteristics of this variety. The olives, harvested between the middle and the end of October, are pressed within 12 hours. Early harvesting allows for high quality to be obtained at the expense of production which is instead low, while milling, carried out just a few hours after harvesting, allows the aromas and phenolic substances to be preserved.
