Wholemeal LINGUINE from Saragolla Khorasan pasta

This INTEGRAL pasta is a simple product obtained by simply mixing Saragolla Turchesco durum wheat semolina with water.  Saragolla is an ancient grain and belongs to the KHORASAN family which have a lower gluten content than the pasta produced by the food industry.  For this reason, pasta is easily digestible by those with intolerance or sensitivity problems towards the common modern grains rich in gluten.  However, this pasta, due to its low gluten content, is less elastic than common industrial pasta, therefore, to prevent it from breaking, it must be mixed gently.  Furthermore, to prevent it from overcooking, it should be removed from the water as soon as it has reached the desired cooking point.
 
 It is an excellent organic wholemeal pasta which, with its bronze drawing which makes it particularly rough, allows the flavor of the condiments to be retained in an optimal way, lending itself very well to use in high quality catering.
 
 The strong point is its flavor, once tasted you will not be able to do without it!
