After the hand-picking, the olives are always manually sorted.
Deamaricazione is obtained with a long natural process of fermentation, without the use of chemical substances (for example sodium hydroxide). This method allows to obtain the BIO certification, otherwise not obtainable.
Conservation then takes place in brine without any pasteurization to keep the organoleptic characteristics unaltered.
This type of pickled olive replaces, in all uses, black olives, unlike which it has a fresher taste with a slightly bitter finish that is more intense in greener olives.
Olives can be enjoyed as an aperitif seasoned with extra virgin olive oil and spices, as a side dish for fish and meat cooked on the grill or in the oven and on pizza.
