Tomatillo cultivation accounted for a large part of the Mayan and Aztec economy. The tomatillo is the fruit of a plant grown mainly in Mexico and Guatemala and, marginally, also in Australia and South Africa. The main production areas are the states of Morelos and Hildago, in Mexico, where its cultivation covers an area of about 13,000 hectares with a production of about 10,000 tons. Strangely, outside of Mexico, the tomatillo plant is almost unknown.
It belongs to the nightshade family like the tomato and is also called the Mexican tomato.

The tomatillo has a very original appearance: a small green tomato enclosed in a paper wrapper. Sometimes, the growing berry enclosed in its calyx breaks it when it reaches maturity.
Tomatil is a good source of potassium and contains vitamin C phosphorus and magnesium.
In Mexico it is used, together with a good dose of hot pepper, to prepare a sauce, the famous MOLE VERDE. Great with chicken, pork or beef.
The tomatillo has a particular, slightly sour taste, IT IS NOT SPICY.
When cooked, the tomatillo is kept in bottles like the tomato.
If you want to use the fruit for sauces or for dishes subject to cooking,
they are harvested at the beginning of ripening, when they are still green; if, on the other hand, they are eaten raw, they must be harvested when fully ripe, when they are yellow and about to fall to the ground.
